KATHIRIKAI PORIYAL



KATHIRIKAI PORIYAL:










INGREDIENTS:

serves - 2 to 3

kathirikai(brinjal) - Medium  3 to 4(cut into small cubes)
onion - 1 medium(finely chopped)
turmeric powder - 1/2 teaspoon
chili powder - 1/2 teaspoon(as per ur taste)
coriander powder - 1/2 teaspoon
oil - 1 tablespoon
salt - to taste

for seasoning:
mustard+urad dal (kadugu,uluntham paruppu) - 1 teaspoon
curry leaves - 1 spring
red chilli - 1 


PROCEDURE:

1. Place a pan in the stove and put oil in to it.when the oil becomes hot,put mustard and urad dal and let the mustard  to splutter..then put the other seasoning ingredients one by one and saute for few seconds.
2. Then add the chopped onion and saute nicely for 2 to 3 mins until it becomes transparent.
3. Then add turmeric powder  into it and saute nicely for 30 secs.
4. Then add the brinjal and saute nicely so that the brinjal pieces nicely got coated with oil.
4. Next goes in the chili powder,coriander powder and salt.
    mix nicely
5. keep the stove in low flame and close the pan with a lid.(open and mix in between so that it wont stick to  the bottom)
5. open after 10 mins to serve the hot spicy brinjal poriyal..
